OYSTER PROFILE
-
Fine Saint Kerber (Brittany, Cancale): Emblematic oyster from Saint Kerber. Briny flavour, typical from the Bay, is accompanied by round notes in the mouth and a firm consistency, thanks to a short storage on the foreshore.
-
Tsarskaya (Brittany, Cancale): Tribute to the Russian tsars who were the first importers of oysters from Brittany. Tsarskaya is a premium Speciale oyster thanks to a maturation of 3 up to 6 months at our seaside.
It is powerful and briny in mouth at first, then when chewing the flesh, it releases a sweet flavour with subtlies notes of almond milk.
-
Fine Ireland (Donegal County): Briny flavour with a little crunchiness on the texture and a slight note of sweetness at the end thanks to the mix of fresh and seawater available in the region.
-
Muirgen (Donegal County): These oysters are grown in the cleanest waters of the Atlantic and are known for their rich, briny flavor that is balanced by a subtle sweetness..
